Iron Chef Michael Symon

Iron Chef Michael Symon is stepping out of Food Network’s Kitchen Stadium and into your kitchen in his new show Cook Like an Iron Chef.  But first, Chef Symon stopped off to answer some questions for GreenChic…
 

GC:  What is your favorite seasonal ingredient?
Symon:
Ramps

GC:  What is your favorite way to use ramps? 
Symon:  I love them pickled and then use them to top rich meats like grilled porterhouse or lamb chops. 

GC:   What is one of your signature summer recipes?
Symon:
  Shaved Zucchini Crudo with Lemon, Almonds and Dill (Symon’s signature recipe to come in GC’s August Newsletter)

GC:  What is one of your secret Iron Chef tips for preparing great meals at home? 
Symon:  It’s all about the product… go to your nearest farmers market and gather what is in season and freshest. 

GC:  What is one thing most viewers don’t know about you? 
Symon:
  I love Harley’s and tattoos a lot, but I love nothing nearly as much as my wife, Liz. 

GC:  What’s one of your go-to meals when entertaining at home? 
Symon:  Lemon and Bay Leaf Roasted Chicken with my Zucchini Crudo… or Ricotta Gnocchi and Brown Butter Parmesan. 

GC:  What can viewers expect from your new show, Cook Like an Iron Chef? 
Symon:
  Recipes and techniques, all cooked in real time and much easier than you may expect.

GC:  What are your views on the sustainable food movement?  Do you employ any of these practices in your cooking at home or at your restaurants? 
Symon:
  I’m proud to say that Liz and I, as well as the restaurants, have been Farm to Table, green and sustainable long before it became “trendy.”  But I’m thrilled that it is a way of life that more and more people are practicing now.

 

Premiering July 22nd on Cooking Channel, Symon, chef and owner of Cleveland’s critically acclaimed Lola and Lolita restaurants, will offer viewers his creative tools, tips and techniques for turning your favorite secret ingredients into delicious dishes that are sure to please all the judges at your dinner table.

Yesterday I had the honor of being a guest expert on Summit Your Life, the talk radio show hosted by Garrison Leykam on COX Radio News-Talk 1400 WSTC/WNLK 1350.  Summit Your Life is a real show for real people, featuring guest experts from various fields such as career, fitness, nutrition, and more, providing real advice for living a rewarding and fulfilling life, even in today’s economy. Garrison was a great host and made me feel at ease, despite my nerves.  Thanks for a great show Garrison!!!

Local chef, blogger, and columnist gets Hot, Rich and Green

Jennifer Spaide, Founder of GreenChic, is no newcomer to the kitchen arena.  In fact, you might say that the kitchen is her favorite room in any house.  Growing up in Maine, Spaide was introduced to the flavors of fresh produce from her grandparents’ gardens.  As a teen and young adult, she harnessed those flavors, and her intuitive culinary skills, by whipping up healthy and fresh meals for her family.  Now, through GreenChic, Spaide creates inspired meals for her clientele.  “I never knew healthy food could taste so good and that I’d be so excited to eat it,” raves one such client.

 

But her place in the career world wasn’t always so clear.  “I got my Master’s in Human Nutrition from Columbia University and started out my career as a nutritionist.  What I discovered was an overwhelming misconception about healthy eating.  I quickly realized that my words, alone, were not enough and that I could affect the greatest change in others lives by actually being a source for and example of fresh, healthy, sustainable eating.  And so I switched gears form counseling to cooking full-time,” said Spaide, who couldn’t be happier with her decision.  “Cooking has always been my passion and I feel very blessed to be able to live it.  Not only does my job give me a chance to express my creativity in the kitchen, but every time I create a meal, I create something I can share with others online and through my writing.”   Spaide likes to say she is on a mission to redefine what it means to be a granola cruncher and inspire people to eat their way to a healthy life. 

 

Spaide’s work recently caught the eye of Rebecca Harrell Tickell, producer of the award-winning environmental documentary film, FUEL.  Tickell was searching out inspiring stories for her newly-available book when she discovered GreenChic.  The book, Hot, Rich & Green:  The secret formula women are using to get rich and save the planet, showcases the stories of inspiring women entrepreneurs with green businesses.  And she wanted Spaide to be a part of it.  Hot, Rich and Green uses stories, insights and advice from women like Spaide to empower other women to find their passion and “masterfully wield the powers of the divine feminine” to turn it into a successful career. Spaide said she is amazed that she was chosen to be part of this project with other such accomplished women.  “It’s truly an honor to be in such remarkable company.  It still hasn’t completely sunk in yet.”  

 

So what’s on the horizon for GreenChic?  Spaide is going to be featured as an expert on COX Radio’s new Summit Your Life talk radio show with Garrison Leykam, News-Talk 1400 WSTC/ 1350 WNLK, March 20th from 12:30-1pm.  And she is working on her first cookbook, Gettin’ Fresh in the Kitchen.  Spaide maintains a biweekly column, GreenChic, in New Canaan News Review and Darien Times, and continues to publish a popular website and blog.

I was completely surprised a few weeks ago when I received an email from Bruce Boyers, editor at Organic Connections Magazine, informing me that the publisher wanted to do a web-exclusive interview on me…my business…GreenChic.  Imagine that!!!  Of course I didn’t hesitate to reply with an enthusiastic “OF COURSE!”, and a few days later we had said interview.  

 

Here are a few excerpts from the piece: 

Thanks to some hardy sustainable-food crusaders, several growing movements, a proliferation of farmers’ markets and an ease of communication, courtesy of the Internet, healthy eating has now gotten at least a little easier. It’s also made far simpler by folks such as Jennifer Spaide and her GreenChic website.

The term Green Chic just kind of popped into her head one afternoon. “I thought it was perfect; it defines exactly what I’m trying to educate people on—green being healthy, organic and sustainable, and chic being hip, fun and not boring or tedious.”

“One of the key concepts of my business is getting people to understand that being healthy, eating healthy and living healthy, being green and sustainable, doesn’t have to be crunchy or boring or time consuming,” Jennifer concluded. “Those are all misconceptions. You can eat healthy and you can do it on a budget and you can do it quickly. I think it’s just a matter of getting people to redefine their thinking around it.
