When I was diagnosed with cancer, ten years ago, I didn’t even know what healthy eating was. I was pretty shocked when I learned how my diet was so lacking in nutrients and I was actually eating all the wrong things. I remember her efforts to educate and fortify me while I was going through chemo. I even remember eating a special lunch she prepared for me from her garden for me to take to work: home grown sautéed spinach and tomato salad with a delicious slice of mozzarella cheese. About 5 years ago, I went through a period where I could only eat liquids. She created homemade soups that were totally organic, made for my palate, and maximized the nutritional impact for my body. They were my dinner for weeks. Last year, she came to my rescue once again with another round of DELICIOUS homemade soups which are truly a meal in themselves! I have learned from her that good nutrition is of maximum importance to your mind and body when your body is weak.
