Serves 4
1 to 1.5 lb scallops
1 apple
½ small jicama
½ red bell pepper
¼ red onion
3 scallions, chopped
¼ cup parsley, chopped
Zest of 1 orange
½ cup plus 2 tbsp orange juice
¼ cup plus 2 tbsp chipotle sauce (your favorite brand)
Salt and pepper to taste
Heat the grill to medium. Combine ¼ cup orange juice with ½ of the orange zest, 2 tbsp chipotle sauce and a pinch of salt and pepper. Give the scallops a rinse and marinade in the orange chipotle sauce for 10-15 minutes. Meanwhile, julienne the apple, jicama, pepper and onion and place in a bowl. Add the scallions, parsley, and remaining ½ of the orange zest. Toss with 2 tbsp orange juice and a pinch of salt and pepper. Set aside. Grill the scallops for 3-5 minutes per side, until scallops are cooked through and have nice grill marks. Make a sauce by combining the remaining ¼ cup chipotle sauce and ¼ cup orange juice. Top with slaw with grilled scallops and drizzle with the sauce.
