Serves 4
4 chicken breasts
1 cup chopped tomatoes
½ onion, chopped
2 garlic cloves, minced
½ cup chopped olives
½ cup chopped parsley
1 tsp dried oregano
1 cup chicken broth
feta cheese
Preheat oven to 375˚. Season your chicken breasts with salt and pepper. Heat a sauté pan over medium-high heat. Drizzle in a little olive oil and sauté the onions and garlic and oregano for a couple minutes. Then gently place in your chicken breasts. Sear on the first side for 3-5 minutes, until beginning to brown. Flip over and then toss in the tomatoes, olives, parsley and chicken broth. Stir around gently then transfer pan to oven for 5-7 minutes to finish cooking through, or cover pan and simmer over medium heat. Serve chicken over couscous or rice and top with the tomato “sauce” and some feta cheese. For a little kick, add some red chili flakes to the sautéing onions, garlic and oregano.
